Bean salad

This salad reminds me of our training days. Simha would create these yummy salads for our work lunches. They would be so flavorful and sumptuous. And lately with our new hydroponic system Gardyn, we just have so much supply of salad greens that his salad skills are back in action! And kids and LOVE it!


I harvested some fresh salad greens from my Gardyn.



A mix of-

Butterhead lettuce

Matilda

Cardinale

Breen

Rouge d'hiver


Add:

Cherry tomatoes (whole/ halved)

Cubes of fresh mozzarella

Shredded mozzarella

1 can of red kidney beans


Season with:

Salt

Pepper


Mix it with salad dressing (home made or store bought)


Crunch it up with some croutons!


Of course you can get creative with this with:


different varieties of home made salad dressings

  1. Simple lemon dressing- lemon juice, chopped cilantro, salt, pepper and olive oil

  2. Tahini dressing- tahini, lemon juice, honey/ agave syrup, salt, red chilli flakes, water

  3. Chilli oil dressing- store bought chilli oil, lemon juice, salt,

  4. Avocado dressing- Blend avocado, lemon juice, olive oil, salt, pepper, red chilli flakes

seeds (sunflower, pepita, chia, hemp)


nuts (pecans, almonds, walnuts)


beans (red kidney, garbanzo, pinto, cannellini, black beans)


fruits (mango, strawberry, blueberry, madarins)- personally in our household other than me no one else cares much for fruits in salads so I usually skip that


avocado


pieces of veggie burger (Simha loves to do this and this salad then becomes a meal in itself!)


Options are endless!
