Jini Dosa

About a year back I stumbled upon this recipe on social media. It is apparently a popular Mumbai street food. This dosa recipe is one of our favorites at home! It makes a regular dosa meal into something fancy! And you can skip making any chutney, sambar, potato filling etc. Saves a lot of time! Plus just 1-2 dosa is sufficient for one person (less time standing in front of the pan, haha). Also this is a perfect one for a vegan like me and rest of my family who are vegetarian. So I make both versions at the same time. I need not make separate meals! The only thing that you need to have ahead of time is the dosa batter. Which can be home made or store bought. So all you got to do it while the pan heats up is to chop all your veggies!!

You will need:

Dosa batter

  • Home made (3:1 or 4:1 ratio of idli rice and urad dal, soaked for 6-8 hours in water, ground into batter consistency, fermented overnight or for 8-12 hours and salt added)

  • Or store bought

Veggies

  • Chopped cabbage (about 1- 2 tbsp, based on size of the dosa)

  • Chopped onion (about 1- 2 tbsp, based on size of the dosa)

  • Chopped peppers (green/red/ purple, about 1 tbsp each, based on size of the dosa)

  • Chopped cilantro(about 1- 2 tbsp, based on size of the dosa)

Again, you can use any vegetables of your choice. The key is to keep them crunchy, finely chopped and select the ones which are easy to cook. Seasonings

  • Schezwan chutney (1/2- 1tsp per taste)

  • Ketchup (1/2- 1tsp per taste)

  • Pav bhaji masala (1/2- 1tsp per taste)

Oil

  • Vegetable/canola oil (1tsp per dosa)


Method:




Heat a pan. Test the pan by splashing some water on it. When hot, pour the dosa batter with a ladle and spread it out into a round dosa shape. Drizzle oil around the dosa. Add the veggies and seasonings in the middle of dosa. Mix them and spread this mixture throughout the dosa. (For vegetarian version, you can mix 1 tsp of butter or ghee to the mixture as well and also add shredded cheese throughout the dosa). Let it cook for a few minutes (you can cover it with a lid if you would like but not necessary). Bottom will start to get crispy and brown. Start taking off the edges and roll the dosa. Cut them into 4-5 smaller portions and serve!



Note:

I have tried this dosa with vegan butter and cheese as well. But honestly I like it without any of that. I feel those make it a bit soggy and I like my dosa crispy and crunchy like eating spring rolls!
