Vegan Cake Pops

This all started when my daughter asked me to make cake pops for her birthday this year. To save time I started out with a boxed cake and then made them into cake pops.

You can check out my post on how to veganize boxed cake.


Let me take you through this quick process of how to make these delicious cake pops. And they are not as cumbersome as you would think!


You will need:



For cake:

1 boxed cake mix (Duncan Hines, some Betty Crocker are accidentally vegan!)

1 cup apple sauce (or 2 3.5 oz pouches)

1 cup water

drizzle of oil for the baking pans

2 9 inches baking pans (you can choose any size and number per the box)


For cake pops:

1/4-1/2 cup vanilla frosting (Duncan Hines, some Betty Crocker are accidentally vegan!)

1 cup vegan chocolate chips/chunks

1 tsp coconut oil

vegan sprinkles (I used rainbow)

cake pops sticks


Method:



Add the cake mix to a bowl. Add in apple sauce, water and mix it using hand or stand mixer. Oil the baking pans. Transfer the cake batter to them. Bake per box instructions. Once done, flip the cake on to a wire rack and let it cool down.


Crumble the cake, remove the firm edges. Add in the frosting. Mix well and make this mixture into balls. Add coconut oil to chocolate chips/chunks. Microwave for 30 sec to 1 min. Let the chocolate melt into a sauce. Dip the cake pop stick in the chocolate sauce. Then insert into cake ball. Dip the ball into the chocolate sauce. Once covered entirely, now add in the sprinkles. Refrigerate it and enjoy!


Some tips:

- removing the firm edges helps with making the balls

- adjust the quantity of frosting so as to ensure you can make them into balls

- dipping the stick first into chocolate sauce before inserting it into the ball ensures it sticks to them

- you can use vegan white chocolate and add in different colors as well to make it more fun (as you can see some light green cake pops in the picture)

- I honestly like the chocolate ones better than white chocolate!
