Paneer Kathi Roll

The first time I enjoyed having this was at my friend Neha's Holi (festival of colors) party! After playing hard the entire morning and all of us soaking wet and fully covered in all sorts of color, it was so refreshing to eat her no mess Kathi rolls which were nicely wrapped in individual foils. That is when I got the idea that this would certainly be an addition to our regular meals!


You could enjoy this for dinner/ lunch/ picnic or as a to-go dinner on the evenings when your kids have back to back activities! The options are endless.


You will need...


Veggies:

1 shallot- chopped

1 tomato- chopped

1/2 green pepper- chopped

1/2 orange pepper- chopped

1 pack (14oz) of paneer- cubed


Heat up a pan on stove top. Add 1 tbsp of oil. Add the shallots and 1 tsp of ginger garlic paste. Saute them till shallots become translucent. Then add tomatoes and peppers. Add the spices:

1/2 tsp turmeric

1/2 tsp red chilli powder

1 tsp coriander powder

1/4 tsp garam masala

1/4 tsp dry mango powder


Coat the veggies with the spices. Saute for about a minute. Then add paneer cubes. Add salt per taste. Cover it with a lid and let it cook for 2-3 minutes.



Once the paneer veggie mixture cools down a bit add 2 tsp of coriander (cilantro) or mint chutney to this (just enough to mildly coat it).

You can either add 1/2 tsp of chaat masala or 1 tsp of lemon juice for some tanginess to this.

Remember to cut down on your salt if you are adding chaat masala ( or else it will be too salty).





Now spread this mixture in middle of a cooked roti/ paratha/tortilla.


Roll it and TADAA!!!


We usually have it with a bowl of Dal ( like a wrap and soup).
