This is one of my favorite cookie recipes to bake. These cookies are healthy, eggless, gluten-free and very easy to put together. My friend Emaya once told me about this recipe with just 5 ingredients! It is from "kingarthurflour" website.
You will need:
3 tbsp softened butter
1cup almond flour
3 tbsp sugar (I used brown sugar)
1/8 tsp salt
1/2 tsp vanilla extract
Method:
Preheat the oven to 350°F. Mix all the above mentioned ingredients. It will come together as a cookie dough. Make them into discs. You could make patterns with fork if you wish. You can enjoy them plain or with toppings.
Topping options:
almonds
pistachios
cashews
pecans
walnuts
raisins
Place these on a greased baking sheet or baking sheet covered with parchment paper. Bake the cookies for 8-10 minutes based on what texture you prefer.
TIP:
Once they are done let them cool down for 10 minutes before transferring them out of the baking sheet to cooling rack. If you try to transfer them out sooner, they would be soft and would crumble and break.
