Avocado Toast

Each time I make this I am reminded of our friend Darshan who makes this with so much enthusiasm and precision. Last time when we were all together on a vacation he kept making this in the morning and we all kept gobbling it up. Haha!


Usually at our home, we don't eat this as a breakfast toast. Because our mornings are quite rushed. Instead I make this as a side for a soup during dinner usually. This goes quit well with mushroom barley soup.


You will need:


Bread:

Multigrain bread slices (or any)


Veggies:

2 avocados

1 small tomato (optional)

lime juice from 1/2 lime

greens/ micro-greens (any)- I used watercress from my Gardyn!


Seasonings:

salt

black pepper

garlic powder

onion powder

red chilli flakes

oregano/mixed herbs


Method:



Cut open the avocado. Remove the seed. Either scoop it out or cut them in small cubes after peeling it off. Add chopped tomatoes to this. Squeeze in lime juice. Add the seasonings per taste. Mix this well and during that process mash the avocado.


Toast the bread slice.

Tip:

You could spread some butter/ghee to the bread prior to toasting it, to bring in that additional flavor. But this optional.


Spread the avocado mixture on top. Top it off with greens/ micro-greens.
