I know that does not really sound Italian! But trust me this is as creamy as any Alfredo sauce pasta. And perfect for a vegan option. The best part is that it is just a one pot pasta.
I first came across this recipe in one of my favorite blogs “Pick Up Limes”. This has become a regular at our household with some twists according to our liking.
You will need:
Veggies: (you could use any veggies of your liking)
1 shallot chopped
7-8 white mushrooms sliced
1 small broccoli florets
1 small carrot sliced
handful of greens
fresh herbs ( optional)
Heat up a pan on stove.
Add olive oil (about 2 tsp).
Saute shallots, let them become translucent.
Add the mushrooms, sauté for about a minute.
Then add the carrots and broccoli and sauté.
Add soy sauce (2 tbsp)
Add the spices:
1 tsp garlic powder
1 tsp onion powder
1 tsp dried oregano
1 tsp red chilli flakes
Add 1 16 oz pack of pasta (I used shell pasta today but you could use any type)
Add 1 14 oz can of coconut milk to this.
Add 2 cups of vegetable broth (you could use more based on how saucy you want the pasta to be). Basically covering the pasta shells to a certain level for it to cook in the sauce.
Add in the fresh herbs (I used basil and thyme from my Gardyn)
Add salt per your taste (depending on if you used regular or low sodium soy sauce and vegetable broth)
Cover it with a lid and let it cook for 10 minutes on medium flame.
Once the pasta shells are cooked al dente (firm but can be bitten). Turn off the stove.
Add 1 tbsp of nutritional yeast
Add the fresh greens (I used green and red mustard, kale from my Gardyn) and mix it in. It will cook in that heat itself.
Serve it as it is (I love it just like that) or with some cheese. I added some fresh mozzarella for my kids.
Now most important tip:
You could make this in your Instant Pot (IP)
On those busy days when you don't really have time to even wait for 10 minutes. Dump all the ingredients except for the fresh greens into your IP. Set it on manual high pressure mode for 3 minutes (sealed position of the valve). Make sure the pasta shells are somewhat covered in the liquid. If you have time you can wait for 10 minutes and then do a manual pressure release or if you have set this up in morning before heading out. Let it do its natural pressure release. Still it would be fine. Pasta shells might be a bit overdone. But who cares. You are coming home to some delicious meal for dinner. Haha!
Of course don't forget to add in your fresh greens before serving!
