I have always loved baking. But I must say, after having kids it is much more rewarding since both Om and Ekaa love baked goods. Also it is a fun activity to do with kids! I bake without eggs and sometimes also try out vegan baking recipes.
Om and Ekaa LOVE fruits! They can eat them fresh, in breads, cakes, smoothies, basically in any form!
Blueberry muffins are one of their favorites! They usually have them as a snack and also helps with their HANGER management while I get a meal ready! Haha
You will need:
1 cup all purpose flour
1/2 tsp baking powder
1/4 tsp baking soda
1/4 tsp salt
Sieve these dry ingredients and mix in a bowl.
1/2 cup hot milk
1/4 cup olive oil
1/2 tsp vanilla extract
1/2 cup coconut sugar (or brown/cane sugar)
Mix olive oil and sugar well. Add milk and vanilla extract. Mix wet ingredients well.
Then fold in the dry ingredients into the wet ingredients. DO NOT over mix.
1 cup blueberries
1 tsp corn starch (optional)
You could either coat the blueberries with corn starch and then add them to the muffin batter or just add them as it is.
Transfer the batter to a muffin pan. You can make either 6 large ones or 12 small.
Om likes to add some blueberries on top as well! Btw this is his creation (wonder who got the ones with more blueberries on top?)...
Tip:
I suggest buying these silicone molds which are reusable. It will eliminate the need to throw out the muffin/cupcake liners each time.
Bake at 350°F for 20 minutes.
You can insert a toothpick to check if the muffins are done. The toothpick should come out clean if they are done.
I could not keep Ekaa’s hands off of the muffins! Now you know that they are definitely a hit at our house :)
