Mango “no cheese” cheesecake (Instant Pot)

I got introduced to making cheesecakes in Instant Pot (IP) by my friend Neha. Thanks to her this particular dessert has become one of our favorites at home!


She sent me this recipe from a blog called “myheartbeats”. I make my own version of this.


You will need:



Crust:

10 graham crackers

3 tbsp melted butter


Grind the graham crackers in a food processor and add butter to that and pulse more. To get a somewhat sticky texture but not really pasty.

Note:

You could make the crust using dates and nuts too (1 cup dates and 1 cup nuts). Just grind both of them together to get a mixture that sticks together but not pasty.

Cheesecake:

1 14oz can of condensed milk

1 cup of Greek yoghurt/whole milk yoghurt

1/4-1/3 cup mango pulp (fresh/from can with no added sugar)


Mix all of them together. Make sure not to have big lumps of yoghurt.


Note:

You could make it without mango pulp. And make different flavors with:

- vanilla extract

- cardamom powder

- kesar/saffron


Time to assemble all this:



I like to make it in mini mason jars. They are perfect size for kids and works well for portion control for adults. Haha! Of course they look really cute :)


Add couple of spoons of the crust mixture on bottom of the jar. Press it down gently. Top it off with the cheesecake mixture. Make sure to keep some space on top for toppings later on. Cover these jars with aluminum foil.


Insert a trivet in your IP. Add 1 cup of water. Add in the jars on top of trivet. Stack the second layer by staggering them on top of the pre-existing jars. Close the lid. Set the valve in sealed position. Set the IP to manual high pressure for 15 minutes. Wait for natural pressure release. While taking the jars out, handle with caution as they would be really hot. Let them cool on countertop for about 15 minutes to 1/2 hour. Then refrigerate for at least 3 hours.


Note:

You could make them in cheesecake pans as well.

For 4-5 inches pan- 20-25 minutes in IP manual high pressure mode

For 7 inches pan- 30 minutes in IP manual high pressure mode


(Tip: It is easier to slide off the cheesecake from the pans while it is still slightly warm)


Toppings:

You could have endless options for the toppings.

- mango pulp

- fresh fruits- mangoes, blueberries, blackberries, strawberries

- berry compote (mix 1 cup of berries with 3 tbsp of sugar and 1 tbsp of water, cook in IP for manual high pressure for 1 minute)


We LOVE fresh fruits at our home. I topped it off with some berries today. Fresh mangoes are my favorite but not in season right now. Even the berries were hard to get to, since I have some little berry monsters at home! Haha!
