This fall we went for apple picking. Of course kids LOVED the experience. But then when it came to ideas to use up those apples, I had to get creative. One day I was not in a mood to put in all the effort towards a pie, hence I started to search for a great, easy vegan apple muffin recipe. The muffins ended up being so good that I tested the same recipe for a cake.
This recipe will make 24 mini muffins which are perfect as a snack and one small 6 inches cake. Both take the same amount of time in the oven. So at the end with minimum effort you have muffins and cake ready in a jiffy!
You will need:
Dry ingredients:
2 cups all purpose flour
1 tbsp baking powder
1 tsp cinnamon
1/2 tsp salt
1 cup sugar (cane or brown sugar)
Wet ingredients:
1 cup milk (I have tried both almond milk and ripple)
1 tbsp vanilla extract
1/2 cup oil (vegetable/canola)
2 flax eggs (2 tbsp flax meal + 6 tbsp hot water)
Apples:
1 apple finely chopped (approximately 1 cup)
Decoration: (optional)
1 tbsp powdered sugar

Method:
Preheat your oven to 400°F.
Mix in the ingredients for flax egg and set it aside for about 5-10 minutes for it to thicken up.
Grease your cake pan (I used 6 inches) and mini muffin pan with oil.
Cupcake and Cake batter:
Add all the wet ingredients in a bowl (including flax egg which by now should have thickened up) and give it a mix. Sieve in all the dry ingredients (except for the sugar) to the wet ingredients mixture. Add the sugar and gently mix in the dry and wet ingredients. Try not to over mix. Now add the chopped apple and fold it in.
Transfer this batter to greased cake and muffin pans.
Before baking you can sprinkle some sugar on top of the muffins. This is an optional step. Om really likes the crunchy sugar crystals on his muffins :)
Bake the cake and mini muffins for 20 minutes at 400°F.
Note: You could test it by inserting a toothpick into the cake and cupcakes. If it is baked completely, then no batter should stick to the toothpick.
Once you bring it out of the oven, transfer it to the wire rack for cooling.
Assembling the cake:
You could choose to dust your cake with some powdered sugar. And then decorate it with fresh berries (I used raspberries).
Or you could eat it as it is.
Or you could add a layer of frosting.
The options are limitless. Have fun with your creativity!
