Vegan Cookies (Snickerdoodle, Peanut Butter and Chocolate Chip)

With the holidays coming up, I was looking for some easy, yet delicious vegan cookie recipes. Then I stumbled upon some youtube videos (including Liv B) that had good ideas for those. But I wanted to have like an all in one cookie recipe. With which I can make a simple sugar cookie and then can turn that into other varieties too. Less work but more creativity! And Bingo! I have one for you here!


You will need:


For the basic sugar cookie dough:

1/2 cup vegan butter (softened)

1 cup cane sugar (or coconut sugar)

2 cups all purpose flour

1 tsp baking powder

1 tsp baking soda

1 tsp vanilla extract

1/4 cup plant based milk (I used almond milk)


Note: This would yield about 16 medium sized cookies.


For snickerdoodle cookies:

1 tbsp cane sugar

1-2 tsp cinnamon


Note: You may need more for topping if you are using the entire cookie dough. This is just if you use 1/3 part of the dough)


For peanut butter cookies:

1-2 tbsp peanut butter

1/4 cup chopped cashews (optional)


Note: This amount of peanut butter is required if you are using only 1/3 part of the cookie dough. For the entire basic cookie dough you would need 1/4 cup peanut butter).


For chocolate chip cookies:

1/4 cup mini vegan chocolate chips (I used semi sweet- Enjoy Life brand from Target)


Note: the amount of chocolate chips would vary based on your personal preference. And also if you are using mini or regular size ones.


Method:





Preheat the oven to 350°F.


Combine all the ingredients for basic cookie dough. Mix and knead the dough.


To proceed further I am going to divide this dough into 3 parts (not quite equal, because I want to make more of those peanut butter cookies, haha). But feel free to divide it anyway you want.


Snickerdoodle cookies:

Divide the dough into equal parts and each part roll into a ball. Now combine the sugar and cinnamon and coat each ball with this mixture.


Transfers these balls into greased baking sheet. Gently press them from top and flatten them a bit to create those cookie shapes.


Peanut butter cookies:

Mix in the peanut butter and chopped cashews into the dough. Knead again and roll them into balls and eventually shape them into cookies. Transfer to the baking sheet.


Note: You can also add chocolate chips in these too!


Chocolate chip cookies:

Add in the chocolate chips into the basic cookie dough. Mix well and roll them into balls and shape them into cookies. Transfer to the baking sheet.


Bake the cookies at 350°F for 10 minutes.


Note:

Of course you could roll the dough and use your creative cookie cutters. Bake them and layer those with yummy frosting and eat it that way as well!


But for these thin layered cookies, bake them only for 6-8 minutes.


Once out of the oven, cool them on a wire rack for 10 minutes or so (if you can wait that long!).
