Vegan Potstickers

I went to medical school in Gangtok, Sikkim. We survived there on "Momos". We used to LOVE them! They would be our snack or favorite go to lunch after our classes. Of course in the current schedule, to make them from scratch is a bit time consuming. And after coming to US, I tried potstickers which were like steamed momos but had a crispy bottom to them. I also ended up finding these vegan wraps in regular grocery stores which made my life so much more simple.


You can make them as a snack, appetizer or to go as a side with Vegan Thai Noodle Soup. You can check out the soup recipe in my blog as well.


Also remember you may think that you are making a LOT of them but actually they will be gone in minutes as everyone starts gobbling them up. So make ENOUGH! Haha!


You will need:


Oil:

1 tbsp for stuffing

2 tbsp for potstickers


Veggies:

1/4 onion or 1 shallot chopped

1 carrot shredded

2 cups of cabbage chopped/shredded


Seasonings:

2 tbsp soy sauce

crushed black pepper

salt per taste


Wraps:

vegan won ton wraps (I used nasoya brand)


Method:




In a pan/skillet heat up oil. Add in the veggies and seasonings. Saute and cook for 5 minutes in medium-high flame. No need to overcook. Stuffing is ready! It is that simple!


For assembling potstickers, take a won ton wrap, apply water to the sides. Fill in a spoonful of stuffing in the middle. Fold it into a triangle, then pinch the opposite ends of triangle to make a loop. Repeat this process with all the wraps till you have used up the filling.


NOTE:

You could fold it into any shape. Just a triangle or like a pinched basket by bringing all the corners of the squares together.


Now heat up oil in a pan/skillet. Add all the the folded wraps on to the pan. Add about a cup of water for steaming. Close with a lid. This will create steam and also the oil at the bottom of the potstickers will make them crispy. This takes about 5 minutes on medium-high flame.


NOTE:

You could choose to either make it into potstickers or just steam them as dumplings/momos. Both ways it tastes yummy!



Serving suggestions:

You can serve this as it is or with a side of soy sauce/hoisin sauce/chilli oil.

Or as mentioned before as a side to go with Vegan Thai Noodle Soup.
