Aloo Gobhi subzi (North Indian style potato cauliflower curry)

I usually make aloo gobhi in two ways. One with onion, tomatoes, masalas and the other without any onion/garlic. This version is the second one! My Amma learnt this recipe from one of her friends. We used to LOVE this. It is such a simple recipe yet amazingly delicious!


The best part is there is no masala in this recipe and it has no onion/garlic! Above all with my Instant Pot (IP) it is usually done in a 2-3 minutes based on what texture you prefer!


You will need:


Tempering/seasonings:

1 tbsp oil

1 tsp cumin seeds

1 inch ginger sliced/chopped

2 green chillies sliced/chopped

1 tsp turmeric powder

salt per taste


Veggies:

2 medium potatoes diced

2 cups cauliflower florets

1 cup green peas (I used frozen)


Garnish:

cilantro chopped


Method:


Heat oil in IP in saute mode. Add cumin seeds, ginger, green chillies, turmeric powder and saute for a bit. Add in the veggies and salt. Add a splash of water. Close the IP lid and set the valve to sealed position. Cook at manual high pressure for 3 minutes. Wait for natural pressure release.


NOTES:

- this is how I usually make it, since I put all the ingredients in IP and leave for work. The potatoes are well done but cauliflower could be a bit overcooked for some people.

- you could choose to cook for 2 minutes instead of 3 minutes or you can opt for quick release as well. But sometimes potatoes can be undercooked if one does quick release.

- to prevent that you can saute potatoes for a bit, let them cook in the heat with a splash of water and then add in the cauliflower and cook for 2 or 3 minutes and do quick pressure release.

- cooking time could vary based on how big your potato/cauliflower pieces are. If you cut them smaller, choose 2 minutes and quick release. If bigger then 3 minutes and possibly natural pressure release.

- at our home given Ekaa has 7 teeth in total, I would rather go in for a more mushy consistency than it being undercooked! Haha


Nevertheless, ultimately any version is going to taste YUMMY! Serve this with a side of dal tadka and/or cucumber raita with HOT HOT rotis!
