Kaju burfi (cashew dessert)

This is one of our favorite desserts at home. It is very easy to make. And if you make it at home you can control what ingredients you put in there compared to what you get at store. For the people who are used to this dessert, this may be looking different since I have added brown sugar instead of white.


Om can literally finish the entire batch in a day. Ekaa also relishes it with her tiny little 6-7 teeth that she has. Haha!


You will need:

1 cup cashews

1/4 cup water

1/2 cup sugar (I used brown)

3-4 strands of saffron

3 pods of cardamom (crushed in mortar/pestle)

1 tbsp ghee


Method:


Add cashews to a grinder. I use my Ninja to do so. Grind it to a fine powder, as much as possible. Well if there are some chunks that is ok too! Even those taste quite good!


In a skillet add water and heat it. Add sugar to that. Let it boil. Add saffron and cardamom to this. It starts to thicken. It will start to make a thread/strand like texture when you pull it with a spatula. Now add the ground cashews and start to stir consistently. Add ghee and continue to stir. This mixture starts to separate from the pan.


That is when you take it out and transfer to a silicone sheet/parchment paper. After transferring it comes together like a dough (handle with caution as it will be hot). Now place a parchment paper on top and roll it out into a thin sheet. Cut it into any shapes that you like. Traditionally they are cut into diamonds. For us it all depends on what Om wants for that day. Haha!
